Looks darn tasty. How do you like those hologen casings. I don't care much for them, I find they break easy.

Yes I did. I was thinking about/tried a baffle for more even heat dispersion but I had to crank up the burner too much to get it to the heat I wanted-hence the burnt wood 1/3 of the way up. Works fine like this.

Looking good! Huntnut thats quite the smoker you have there, where did you find the plans for it, or out of your head plans. Next Monday we  make up the rest of our moose and elk hamburg into sausage, definitely got to smoke a batch or two.
Maybe it's just me but I find smoked sausage not as good after freezing it ..... nothing like fresh stuff.  Any thoughts on that?

It's a mixture of ones I saw on the internet and plans from my head. As far as freezing smoked sausage-I find that cooking sausage is not as good after freezing but smoke sausgae that is already cooked I find the same as pre frozen.
