How do you clean geese?

A goose hunter I am not!!

I shot a goose by chance flying over the river when I was sneaking up on a chicken many years ago.(lead shot still legal)

Yes I had a migratory license because...well...because..haha

I tried plucking it like a farm chicken and soon got fed up with that so I just cut the breast off and skinned it..

By now I can hear you southern bird hunters just lol at me but really..

How do you guys pluck a goose?  :(

      I've always skinned out and breasted them but take it a bit further and pull the skin off the legs and cut out the drum sticks.  Really quick process.  I find the legs are the tastiest but really tough on a goose.

 I am a Breast  man only . I have shot hundreds or more .
  The legs are to tough IMO , I just open them up and fillet .
  I started making strips cutting the breast across the grain .
   Marinating overnight , breading , in the oven covered to
    160 degrees .....tenderly delicious .
    Domestic geese are way fatter , totally different bird 
    Done up just like a turkey , my gramma was a master
     Farm goose cooker .

Generally we only keep the breast as well. We fillet them off the bird one on each side and wash clean and freeze generally one bird per bag. We use it just like our moose meat, sliced thin, cross grain for stir fries,,very delicious. If we get some late season birds I will sometimes pluck one or two for roasting but they have to be fat birds. I will also the odd time keep a few thighs and legs. Put in a roaster with seasoning, apples,and some apple juice. The acidity in the apples helps break down the meat and tenderize it. I will,do a couple of these in the fall for a change up.

It's coming soon, I may get out this weekend.

We always took them to the Hutes.  $5./bird for geese & $2. for ducks.  They wanted  the feathers & down for their quilts.  Best deal in the country, the birds are being well looked after, and you have the afternoon to find more for them to clean next morning or stick the head into the proverbial pail, your choice. ;D

The "Gut Wrench" is pretty good as well.

Darn Good inventions.  Especially for you folks who remember having to pluck geese on a Sunday afternoon.

"And save the down for granny".  Mind you, It was a nice way to meet girls who were assigned to same duties.

I typically pluck one bird a season.  All other birds get breasted and we take the legs out.  The father in law cans the legs, and they taste great over rice.  Same with our ducks.

Take them to the nearest Hute colony!!!!  They do one hell of a job & reasonably priced, too.  They use the feathers & down in their quilt & pillow making ventures.
