Hi .. i just do a boneless fillet and take the skin off then too and everything stays with the fish except the fillets .. i then if big enough take out the j bone .. then i wash and bread with cornflake crumbs and Lawrys salt combo and fry in oil/butter .. now i just cook with nothing as i am needing Omega oils and leave the brown fat on the fish it is the only way to get all the good Omega oil to your body and Lake Whitefish are one of the best for Omega oil
